Ingredients
  

Crepe Wrappers:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups water
  • 1 tbsp cooking oil
  • 1/ tsp salt

Filling:

  • 2 tbsp cooking oil
  • 4 cloves garlic minced
  • 1 pc small onion chopped
  • 1 cup tofu cubed (or ground pork/chicken)
  • 1 cup carrots julienned (thin strips)
  • 1 cup sweet potato kamote, julienned
  • 2 pcs cabbage shredded
  • 1 cup Baguio beans sliced thinly
  • 1 cup ubod or singkamas jicama, thinly sliced
  • Salt and pepper to taste
  • Lettuce leaves for wrapping

Peanut Sauce:

  • 2 cups water
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tbsp peanut butter
  • 2 tbsp cornstarch dissolved in 3 tbsp water
  • 2 tbsp minced garlic
  • 1/4 cup roasted peanuts crushed (for topping)

Instructions
 

PREPARE THE FILLING

  • Sauté: In a wok, heat oil and sauté garlic and onions.
  • Cook Protein/Veg: Add tofu (or pork/shrimp) and cook until brown. Add sweet potato, carrots, and baguio beans. Stir-fry until tender-crisp.
  • Add Greens: Add cabbage and celery. Cook for another 1–2 minutes, ensuring not to overcook.
  • Season: Season with salt, pepper, or a dash of fish sauce (patis).
  • Drain: Transfer the mixture to a colander to drain excess liquid. This step is crucial to prevent soggy wrappers.

MAKE THE CREPE WRAPPERS

  • Mix Batter: In a bowl, whisk flour, eggs, water, salt, and oil until smooth.
  • Cook: Heat a non-stick pan over low heat. Pour 1/4 cup of batter and swirl to cover the pan.
  • Flip: Cook for 1–2 minutes until the edges lift. Flip briefly or cook only on one side. Repeat until all batter is used.

PREPARE THE PEANUT SAUCE

  • Boil: In a saucepan, combine water, soy sauce, and brown sugar. Bring to a boil.
  • Thicken: Add peanut butter and stir until dissolved.
  • Slurry: Slowly pour in the cornstarch mixture while stirring continuously until the sauce thickens.
  • Finish: Add garlic and simmer for another minute.

ASSEMBLY

  • Wrap: Lay one wrapper flat and place a lettuce leaf in the center.
  • Fill: Spoon 1/2 cup of filling on the lettuce.
  • Roll: Fold the bottom edge up, then fold the sides inward, and roll tightly.
  • Serve: Place on a plate, pour the warm peanut sauce over the top, and garnish with extra crushed peanuts and minced raw garlic.
