- 1/4 cup roasted peanuts crushed (for topping)
Instructions
PREPARE THE FILLING
- Sauté: In a wok, heat oil and sauté garlic and onions.
- Cook Protein/Veg: Add tofu (or pork/shrimp) and cook until brown. Add sweet potato, carrots, and baguio beans. Stir-fry until tender-crisp.
- Add Greens: Add cabbage and celery. Cook for another 1–2 minutes, ensuring not to overcook.
- Season: Season with salt, pepper, or a dash of fish sauce (patis).
- Drain: Transfer the mixture to a colander to drain excess liquid. This step is crucial to prevent soggy wrappers.
MAKE THE CREPE WRAPPERS
- Mix Batter: In a bowl, whisk flour, eggs, water, salt, and oil until smooth.
- Cook: Heat a non-stick pan over low heat. Pour 1/4 cup of batter and swirl to cover the pan.
- Flip: Cook for 1–2 minutes until the edges lift. Flip briefly or cook only on one side. Repeat until all batter is used.
PREPARE THE PEANUT SAUCE
- Boil: In a saucepan, combine water, soy sauce, and brown sugar. Bring to a boil.
- Thicken: Add peanut butter and stir until dissolved.
- Slurry: Slowly pour in the cornstarch mixture while stirring continuously until the sauce thickens.
- Finish: Add garlic and simmer for another minute.
ASSEMBLY
- Wrap: Lay one wrapper flat and place a lettuce leaf in the center.
- Fill: Spoon 1/2 cup of filling on the lettuce.
- Roll: Fold the bottom edge up, then fold the sides inward, and roll tightly.
- Serve: Place on a plate, pour the warm peanut sauce over the top, and garnish with extra crushed peanuts and minced raw garlic.
