40 oz Sweet Potatoes - about 3 cups

whole eggs
beaten

Sugar

vanilla
1/2
cup
margarine
melted
1/3
cup
evaporated milk

tsp.
cinnamon
1
cup
light brown sugar
TOPPING:
1/3
cup
margarine
do not melt this one
1/2
cup
Self-rising flour
3/4
cup
chopped pecans
Instructions
Mix sweet potatoes, eggs, sugar, vanilla, 1/2 cup melted margarine, evaporated milk, and cinnamon with mixer until well blended.
Pour into lightly greased 13X9 baking dish.
Blend flour, 1/3 cup margarine, and brown sugar with pastry blender until mixture resembles coarse granules.
Stir in nuts. Sprinkle over sweet potato mixture.
Bake at 325 for 45 min.
