Clean chicken breast with vinegar and lime juice
Pat dry with a paper towel
Slice the side of each chicken breast that has the fold on the bottom creating a pocket
* careful not to cut all the way through
Add all chicken breast to large bowl with lid or zip lock bag
Add zesty Italian dressing to chicken breast
Ensure all the chicken is coated
Cover and let marinate for at least 1 hour
Preheat oven to 375 degrees
Add 1 tsp olive oil to large skillet on medium heat
Add spinach and garlic
Cook until spinach has wilted
Set spinach with garlic and sun dried tomatoes aside
In a bowl, mix remaining ingredients
Once fully mixed gently stir in spinach with garlic and sun dried tomatoes
Stuff each chicken breast with filling
Add 2 tsp olive oil to large skillet on medium-high
Add chicken breast and sear until golden brown on each side, approx. 2 - 3 minutes
Preheat oven to 375 degrees
Transfer chicken to baking dish
Bake for 20 minutes or until chicken is fully cooked
Removed from oven
* optional - sprinkle extra mozzarella cheese over top of chicken
