Great Grandma's Banana Bread

This family recipe was handed down to me by my great grandmother and I love how it uses ingredients we have on hand. I think my kids purposefully don't eat bananas so that I'll make it!

- 1 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 8 bananas mashed
- 4 c. flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- ½ cup milk
- 1 tsp. vanilla
- 2 cups broken walnuts optional
Beat oil and sugar together.
Add eggs and beat.
Add bananas to a gallon sized ziplock back and mash. After they are mashed, cut a tip of the bag open and add to your mixture.
Add the flour, baking soda, baking powder, salt, milk and vanilla. Mix to a smooth batter. Add nuts (if desired).
Pour into prepared loaf pan. Bake at 350 degrees for 25-35 minutes or until center of loaf is done.
I’ve always made this in the smaller mini-loaf pans (muffin tins would work too). If you are going to make in a regular loaf pan, you will want to cook for longer or until the dough is cooked through.
