Grandma Julie's Rice Balls

My grandmother from Brooklyn made these all the time, I’ve adapted the recipe to use gluten-free and dairy-free ingredients so I can enjoy them now. They taste just as good as I remember! I love serving them with homemade marinara sauce drizzled on top or on the side for dipping, along with some freshly grated Parmesan cheese.
- 4 Cups of Water
- 2 cups of Jasmine Rice
- 1 Stick of Vegan Butter or Regular Butter
- 4 Eggs Separated
- 12 oz. Vegan Parmesan Cheese or Regular Parmesan Cheese
- 12 oz. Bag Vegan Mozzarella Cheese or Regular Mozzarella Cheese
- Salt and Pepper To Taste
- Gluten Free Bread Crumbs
- Bowl Marinara Sauce
- Freshly Grated Parmesan Cheese To Top
Make rice
While rice is hot add salt, pepper, parmesan cheese, stick of butter and mix
Cook mixture for 20 minutes
Add 4 egg yolks and bag of mozzarella cheese
Mix and refrigerate overnight
The next scoop into balls (size of choice but no bigger than a baseball)
Roll in breadcrumbs
Spray with oil spray (I used Avocado Oil Spray)
Air fry till golden brown and crispy (Times vary based on air fryer)
If preferred you can also deep fry till golden brown
