fresh rosemary
chopped (or 1 tbsp dried)

fresh thyme
or ½ tbsp dried

Dijon mustard

lemon juice

tsp

black pepper
Instructions
Prep the Lamb:
Take the lamb out of the fridge 30-60 minutes before cooking to bring it to room temperature.
Pat it dry with paper towels and place it in a roasting pan or large baking dish.
Make the Herb Butter:
In a bowl, mix the butter, olive oil, garlic, rosemary, thyme, Dijon mustard, lemon juice, salt, and pepper.
Rub this mixture all over the lamb, making sure to get into any crevices.
Roast the Lamb:
Preheat your oven to 400°F (200°C).
Roast for 15 minutes, then lower the temperature to 325°F (160°C).
Continue roasting for 1.5 to 2 hours, or until the internal temperature reaches:
125°F (52°C) for rare
135°F (57°C) for medium-rare
145°F (63°C) for medium
Rest & Serve:
Remove from the oven, cover with foil, and let rest for 15-20 minutes before slicing.
Serve with roasted potatoes, asparagus, or a fresh spring salad.
