Garlic Herb Butter Roasted Lamb

Ingredients
  

  • 4-5 lb bone-in leg of lamb or boneless if preferred
  • ¼ cup unsalted butter softened
  • 3 tbsp olive oil
  • 6 cloves garlic minced
  • 2 tbsp fresh rosemary chopped (or 1 tbsp dried)
  • 1 tbsp fresh thyme or ½ tbsp dried
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tsp salt
  • 1 tsp black pepper

Instructions
 

Prep the Lamb:

  • Take the lamb out of the fridge 30-60 minutes before cooking to bring it to room temperature.
  • Pat it dry with paper towels and place it in a roasting pan or large baking dish.

Make the Herb Butter:

  • In a bowl, mix the butter, olive oil, garlic, rosemary, thyme, Dijon mustard, lemon juice, salt, and pepper.
  • Rub this mixture all over the lamb, making sure to get into any crevices.

Roast the Lamb:

  • Preheat your oven to 400°F (200°C).
  • Roast for 15 minutes, then lower the temperature to 325°F (160°C).

Continue roasting for 1.5 to 2 hours, or until the internal temperature reaches:

  • 125°F (52°C) for rare
  • 135°F (57°C) for medium-rare
  • 145°F (63°C) for medium

Rest & Serve:

  • Remove from the oven, cover with foil, and let rest for 15-20 minutes before slicing.
  • Serve with roasted potatoes, asparagus, or a fresh spring salad.
