Chicken Ginger Soup (Tinolang Manok)

Tinolang Manok is a traditional Filipino chicken soup dish, often enjoyed as a comforting and flavorful meal. It's made with chicken, usually simmered with a combination of vegetables like papaya, bok choy or chayote. The broth is seasoned with fish sauce, ginger, and onions, giving it a rich, savory taste.

- 1 kg chicken cut into serving pieces
- 2 medium sayote chayote, peeled and sliced
- 1 thumb-sized piece of luya ginger, sliced thinly
- 1 medium sibuyas onion, chopped
- 4 cups water or chicken broth
- 1/2 cup fish sauce patis or to taste
- 1/2 teaspoon black pepper
- 1 bunch dahon ng sili chili leaves
- 1 small bunch pechay bok choy, separated into leaves
- 2 tablespoons cooking oil
Sauté the aromatics – Heat oil in a pot over medium heat. Sauté onions until soft, then add ginger and cook until aromatic.
Cook the chicken – Add the chicken pieces and cook until lightly browned. Pour in the fish sauce and stir well.
Simmer – Once the chicken has rendered its juices, pour in the water or chicken broth. Bring to a boil, then lower the heat and let it simmer for about 20-25 minutes, or until the chicken is tender.
Add the vegetables – Add the sayote and cook for about 5 minutes until slightly tender.
Finish with greens – Add the pechay and dahon ng sili. Stir gently and let it cook for another 2-3 minutes until the leaves are wilted.
Season and serve – Taste and adjust with salt and pepper as needed. Serve hot with steamed rice.
