Spinach Stuffed Chicken

A healthy, tasty stuffed chicken breast that goes great with any side dish and/or vegetables.

Ingredients
  

  • 16 oz. zesty Italian dressing
  • 4 boneless skinless chicken
  • 1/2 tsp paprika
  • 3 tbsp olive oil
  • 3 cups roughly chopped spinach
  • 4 cloves minced garlic
  • 1/3 cup sun-dried tomatoes drained and chopped
  • 4 oz. softened cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated parmesan
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp onion powder
  • 1/8 tsp red pepper flakes

Instructions
 

  • Clean chicken breast with vinegar and lime juice
  • Pat dry with a paper towel
  • Slice the side of each chicken breast that has the fold on the bottom creating a pocket
  • * careful not to cut all the way through
  • Add all chicken breast to large bowl with lid or zip lock bag
  • Add zesty Italian dressing to chicken breast
  • Ensure all the chicken is coated
  • Cover and let marinate for at least 1 hour
  • Preheat oven to 375 degrees
  • Add 1 tsp olive oil to large skillet on medium heat
  • Add spinach and garlic
  • Cook until spinach has wilted
  • Set spinach with garlic and sun dried tomatoes aside
  • In a bowl, mix remaining ingredients
  • Once fully mixed gently stir in spinach with garlic and sun dried tomatoes
  • Stuff each chicken breast with filling
  • Add 2 tsp olive oil to large skillet on medium-high
  • Add chicken breast and sear until golden brown on each side, approx. 2 – 3 minutes
  • Preheat oven to 375 degrees
  • Transfer chicken to baking dish
  • Bake for 20 minutes or until chicken is fully cooked
  • Removed from oven
  • * optional – sprinkle extra mozzarella cheese over top of chicken
