Spinach Stuffed Chicken
A healthy, tasty stuffed chicken breast that goes great with any side dish and/or vegetables.
Ingredients
- 16 oz. zesty Italian dressing
- 4 boneless skinless chicken
- 1/2 tsp paprika
- 3 tbsp olive oil
- 3 cups roughly chopped spinach
- 4 cloves minced garlic
- 1/3 cup sun-dried tomatoes drained and chopped
- 4 oz. softened cream cheese
- 1 cup shredded mozzarella cheese
- 1/3 cup grated parmesan
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp onion powder
- 1/8 tsp red pepper flakes
Instructions
- Clean chicken breast with vinegar and lime juice
- Pat dry with a paper towel
- Slice the side of each chicken breast that has the fold on the bottom creating a pocket
- * careful not to cut all the way through
- Add all chicken breast to large bowl with lid or zip lock bag
- Add zesty Italian dressing to chicken breast
- Ensure all the chicken is coated
- Cover and let marinate for at least 1 hour
- Preheat oven to 375 degrees
- Add 1 tsp olive oil to large skillet on medium heat
- Add spinach and garlic
- Cook until spinach has wilted
- Set spinach with garlic and sun dried tomatoes aside
- In a bowl, mix remaining ingredients
- Once fully mixed gently stir in spinach with garlic and sun dried tomatoes
- Stuff each chicken breast with filling
- Add 2 tsp olive oil to large skillet on medium-high
- Add chicken breast and sear until golden brown on each side, approx. 2 – 3 minutes
- Preheat oven to 375 degrees
- Transfer chicken to baking dish
- Bake for 20 minutes or until chicken is fully cooked
- Removed from oven
- * optional – sprinkle extra mozzarella cheese over top of chicken
