Jamaican Curry Chicken
A great, flavorful curry chicken dish that can be served on the side or over rice.
Ingredients
- 3 lbs. chicken
- 2 tbsp yellow curry powder
- 2 tbsp all-purpose or chicken seasoning
- 3 cloves crushed garlic
- 1 medium purple onion chopped
- 1 small potato diced
- 3 sprigs of fresh thyme
- 1 large carrot chopped
- 1 small scotch bonnet pepper leave whole
- 3 tbsp cooking oil
- 1 tsp salt
- Coconut milk optional
Instructions
- Remove skin from chicken and cut into small pieces.
- Wash chicken with 1 tsp of lime or lemon juice and 1 tsp of vinegar.
- Rinse and drain access water from chicken.
- Pat dry with a paper towel.
- In a large bowl, add chicken, onion, garlic, salt, all-purpose/chicken seasoning and 1 tbsp curry powder.
- Combine all ingredients and let marinate for at least 30 minutes.
- Add cooking oil and 1 tbsp curry powder to large pot
- Heat oil and curry on medium.
- Once the curry powder turns golden brown add the seasoned chicken and stir well.
- Let chicken cook until light brown on all sides.
- If needed, add a little water to prevent burning or sticking.
- Add carrots, potato, and thyme.
- Add water (or coconut milk) until top of chicken is slightly covered.
- Add scotch bonnet, covered pot and let cook for 30 minutes or until chicken is cooked and juice looks like a curry gravy.
- Stir as needed.
- Removed scotch bonnet and thyme once chicken is done.
