
Garlic Herb Butter Roasted Lamb
Perfect Easter Dish
Ingredients
- 4-5 lb bone-in leg of lamb or boneless if preferred
- ¼ cup unsalted butter softened
- 3 tbsp olive oil
- 6 cloves garlic minced
- 2 tbsp fresh rosemary chopped (or 1 tbsp dried)
- 1 tbsp fresh thyme or ½ tbsp dried
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 2 tsp salt
- 1 tsp black pepper
Instructions
Prep the Lamb:
- Take the lamb out of the fridge 30-60 minutes before cooking to bring it to room temperature.
- Pat it dry with paper towels and place it in a roasting pan or large baking dish.
Make the Herb Butter:
- In a bowl, mix the butter, olive oil, garlic, rosemary, thyme, Dijon mustard, lemon juice, salt, and pepper.
- Rub this mixture all over the lamb, making sure to get into any crevices.
Roast the Lamb:
- Preheat your oven to 400°F (200°C).
- Roast for 15 minutes, then lower the temperature to 325°F (160°C).
Continue roasting for 1.5 to 2 hours, or until the internal temperature reaches:
- 125°F (52°C) for rare
- 135°F (57°C) for medium-rare
- 145°F (63°C) for medium
Rest & Serve:
- Remove from the oven, cover with foil, and let rest for 15-20 minutes before slicing.
- Serve with roasted potatoes, asparagus, or a fresh spring salad.
