
Chipotle Copycat Cilantro Lime Rice
Great side item for Mexican meals, but also goes great with Mediterranean. From theslowroasteditalian.com
Ingredients
- 4 cups water
- 2 cups long-grain jasmine rice
- 2 bay leaf
- 2 teaspoons kosher salt
- 2 tablespoons canola oil or any flavorless oil
- 2 tablespoons finely chopped cilantro
- 2 tablespoons fresh lime juice
- 4 teaspoons fresh lemon juice
- 2 teaspoons orange juice
Instructions
- In a medium saucepan over high heat bring water to a boil. Add rice, bay leaf and salt. Stir to coat rice. Return to a boil. Once it is a full rolling boil, reduce to simmer and cover for 15 minutes. Remove from heat, leave covered for 5 minutes.
- Remove bay leaf. Fluff rice with a fork, add the oil, cilantro, and juices. Stir to combine.
- Serve and enjoy!
