Caramel Apple Pie

Quick and easy, but highly requested!!

Ingredients
  

  • 1 store bought double pie crust or homemade
  • 3/4 Cup sugar
  • 3 Tablespoons Cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans optional
  • 1/2 Cup caramel ice cream topping
  • 5-6 Granny Smith apples sliced thin

Instructions
 

  • Preheat oven to 400 degrees
  • Stir together sugar, cornstarch and cinnamon. Toss with apples in a mixing bowl.
  • Pour the mixture into the first unbaked pie crust then drizzle with caramel topping.
  • Sprinkle with pecans.
  • Place teh second pie crust over top and flute the edges, slit the top.
  • Place on baking sheet.
  • Bake 45-50 minutes until golden brown.
  • I usually foil the edges until the last 15-20 minutes of baking.
  • Allow to cool for at least an hour before cutting.
  • Serve with whipped topping or ice cream.
