Great Grandma’s Banana Bread

Great Grandma’s Banana Bread

Jen Clarke
This family recipe was handed down to me by my great grandmother and I love how it uses ingredients we have on hand. I think my kids purposefully don’t eat bananas so that I’ll make it!

Total Time 45 minutes
Course Breakfast, side dishes
Servings 6 people

Ingredients

  • 1 c. vegetable oil
  • 2 c. sugar
  • 4 eggs
  • 8 bananas mashed
  • 4 c. flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • ½ cup milk
  • 1 tsp. vanilla
  • 2 cups broken walnuts optional

Instructions

  • Beat oil and sugar together.
  • Add eggs and beat.
  • Add bananas to a gallon sized ziplock back and mash. After they are mashed, cut a tip of the bag open and add to your mixture.
  • Add the flour, baking soda, baking powder, salt, milk and vanilla. Mix to a smooth batter. Add nuts (if desired).
  • Pour into prepared loaf pan. Bake at 350 degrees for 25-35 minutes or until center of loaf is done.
  • I’ve always made this in the smaller mini-loaf pans (muffin tins would work too). If you are going to make in a regular loaf pan, you will want to cook for longer or until the dough is cooked through.
