
Avocado & Feta Salsa
A fresh spring/summer salsa to keep you cool!
Ingredients
- 1 cup English cucumber diced
- 1 cup tomatoes diced
- 1/2 cup Kalamata olives sliced
- 1/4 cup red onion finely chopped
- 1 large avocado diced (or 2 small avocados)
- 1/4 cup feta cheese crumbled
- 1 Tbsp lemon juice
- 1 Tbsp red wine vinegar
- 1/2 tsp dried dill
- 1/4 tsp garlic powder
- Salt to taste
Instructions
- Combine all ingredients in a bowl and toss.
- Serve with Pita chips.
