Sweet Potato Casserole
Ingredients
- 1 can 40 oz Sweet Potatoes – about 3 cups
- 2 whole eggs beaten
- 1 c. Sugar
- 1 tsp. vanilla
- 1/2 cup margarine melted
- 1/3 cup evaporated milk
- 1 tsp. cinnamon
- 1 cup light brown sugar
TOPPING:
- 1/3 cup margarine do not melt this one
- 1/2 cup Self-rising flour
- 3/4 cup chopped pecans
Instructions
- Mix sweet potatoes, eggs, sugar, vanilla, 1/2 cup melted margarine, evaporated milk, and cinnamon with mixer until well blended.
- Pour into lightly greased 13X9 baking dish.
- Blend flour, 1/3 cup margarine, and brown sugar with pastry blender until mixture resembles coarse granules.
- Stir in nuts. Sprinkle over sweet potato mixture.
- Bake at 325 for 45 min.
