Sweet Potato Casserole

Ingredients
  

  • 1 can 40 oz Sweet Potatoes – about 3 cups
  • 2 whole eggs beaten
  • 1 c. Sugar
  • 1 tsp. vanilla
  • 1/2 cup margarine melted
  • 1/3 cup evaporated milk
  • 1 tsp. cinnamon
  • 1 cup light brown sugar

TOPPING:

  • 1/3 cup margarine do not melt this one
  • 1/2 cup Self-rising flour
  • 3/4 cup chopped pecans

Instructions
 

  • Mix sweet potatoes, eggs, sugar, vanilla, 1/2 cup melted margarine, evaporated milk, and cinnamon with mixer until well blended.
  • Pour into lightly greased 13X9 baking dish.
  • Blend flour, 1/3 cup margarine, and brown sugar with pastry blender until mixture resembles coarse granules.
  • Stir in nuts. Sprinkle over sweet potato mixture.
  • Bake at 325 for 45 min.
