Pizzelle

Delicious Central-Italian wafer cookie that my family usually makes at Christmas-time but they are delicious with coffee all year long! You will need a specific pizzelle iron (electric or old-fashioned) for this recipe.

Servings 0 Approx 2-3 dozen pizzelle wafers

Ingredients
  

  • – 3 large eggs
  • – 3/4 cup sugar
  • – 3/8 tsp salt
  • – 1 tsp vanilla extract or 1/4 to 1/2 tsp of other extract such as almond lemon or anise (traditional)
  • – 1 3/4 cups all-purpose flour
  • – 2 tsp baking powder
  • – 1/2 cup unsalted butter melted

Instructions
 

  • Beat eggs, sugar, salt, vanilla (or other extract) until well combined.
  • Stir in flour and baking powder. Mix until smooth.
  • Add melted butter, mix well until smooth again. Batter will be thick and soft.
  • Heat pizzelle iron. Once hot, drop a small spoonful of the batter on the iron. Close the iron to bake the wafer. Check for doneness until you know about how long it should take for a golden brown wafer. Electric irons sometimes have an indicator depending on the heat level, adjust heat as needed.
  • Cool the wafers completely, they don't take long. Serve plain, drizzled with chocolate or dusted with powdered sugar.
