Pork Chop Marinade

An easy week night marinade for pork chops that you can toss together in the morning, let it sit all day, and then cook in a half hour.

Ingredients
  

  • 4 thick cut pork chops adjust time down if using thinner than 2inch thick
  • 1 c regular soy sauce
  • 1/4 c sweet soy sauce you can get this at an Asian market or mix one part soy sauce with one part maple syrup if not available
  • 1 1/2 tsp ground ginger
  • 3 tbsp minced ginger or to taste
  • 1 tbsp ground black pepper
  • 1 tbsp butter or neutral oil not olive oil

Instructions
 

  • Mix all ingredients and add to bag or bowl, add pork chops to ingredients and seal or cover. Marinate for at least 1 hour or max 24 hours.
  • Preheat oven to 400 degrees
  • When it’s time to cook, melt butter in oven safe pan.
  • Remove chops from marinade but save the marinade.
  • Dry chops with a paper towel.
  • Season with a small amount of kosher salt and black pepper
  • Once the butter starts to brown and smell slightly nutty, add pork chops to pan to sear.
  • Turn chops so all sides are browned.
  • Place, uncovered in oven for 15 minutes or until the chops reach 135 degrees.
  • Remove from oven and place on med-high burner and add marinade to pan with chops.
  • Bring marinade to boil as chops finish cooking. Marinade should boil for at least 10 minutes. While cooking, use spoon to drench chops and turn every few minutes so all sides are coated.
