German Pancakes with Buttermilk Syrup

Ingredients
  

PANCAKES

  • 6 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • dash salt
  • 1 teaspoon vanilla extract
  • 5 Tablespoons butter

SYRUP

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 cup buttermilk
  • 1 Tablespoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda

Instructions
 

  • Pancakes
  • Preheat oven to 425 degrees F.
  • As oven preheats, put the butter in an un-greased 9×13-in. metal baking dish and place in oven, just until melted.
  • Place the eggs, milk, flour, salt and vanilla in a blender; cover and process until smooth. Pour batter into baking dish, over melted butter.
  • Bake, for 22-27 minutes or until edges are golden brown and puffy.
  • To serve, sprinkle generously with powdered sugar and syrup.
  • Syrup
  • In a large saucepan, melt butter. Add sugar, buttermilk, vanilla, and cinnamon then whisk to combine. Bring mixture to a full boil, and once boiling, reduce to simmer for 2 minutes while whisking constantly.
  • Whisk in baking soda and cook for 30 more seconds, whisking constantly. Mixture will foam and rise.
  • Remove from heat and set aside to rest for a few minutes before serving.
