Smoked Salmon Nori Bowl
My husband discovered this recipe a couple of years ago and has been a go to recipe ever since. It's very easy and refreshing, especially in the Florida heat!
Ingredients
- 1 small head cauliflower riced
- 1 English cucumber Sliced into 1/2 moons (peel optional)
- 1 carrot grated
- 1/4 red onion diced
- 8 oz. smoked salmon chopped into bite size pieces
- 2 avocados diced
- 2 nori sheets cut into matchsticks
- 1/2 cup olive oil extra virgin
- 1/4 cup coconut aminos
- Juice from 1 lime
- 2 tbsp cooking fat I use coconut oil but you can use any
- Sea salt and freshly ground black pepper
- Sesame seeds as garnish (optional)
Instructions
- Prep the cucumber, carrot, onion, salmon, avocado, and nori; Set aside
- Combine the olive oil, coconut aminos, and lime juice in a small bowl. Whisk until emulsified. Set aside
- Rice cauliflower in a food processor
- Heat 2 tbsp of cooking fat in a large skillet over medium heat.
- Add the riced cauliflower and season to taste with salt and pepper, stir to mix everything well.
- Cook riced cauliflower for about 5-8 minutes, stirring occasionally until the cauliflower is just tender.
- Transfer riced cauliflower into 4 individual bowls
- Divide cucumber, carrot, onion, salmon, avocado, and nori amongst the 4 bowls.
- Sprinkle with sesame seeds, if using, and drizzle dressing over top.
- Serve immediately
