Meatloaf Mini’s

A quick & easy way to make meatloaf that your family will actually like! I make mine in mini muffin pans and my family is always asking for more.

Ingredients
  

  • 1 lb Ground Beef
  • 2-3 eggs
  • 1 package stuffing mix dry, not cooked
  • Shredded cheese + cubed cheese
  • BBQ Sauce I prefer Sweet Baby Ray’s
  • Cooking Spray

Instructions
 

  • In a large bowl, combine ground beef, eggs, dry stuffing mix (just throw it in there straight from the package), a handful of shredded cheese and some BBQ sauce. Mix well. Spray your mini muffin pans with cooking spray. Using a scoop, fill each mini muffin-pan with your meatloaf mixture.
  • Once you have complete this step, bury small cubes of cheese into each meatloaf mixture. I usually bury 1-2 small cubes.
  • Finally, add a little BBQ sauce to the top of each meatloaf muffin.
  • Bake at 350 degrees for 25-30 minutes or until it reaches the internal temp of 160 degrees.
