
Oven Denver Omelet
An easy weeknight meal when you add a salad and hashbrowns. Great way to use up leftover ham. I know eggs are $$ now, but still better than beef! You can mix up the meat/veg to your liking. Chorizo and Monterrey Jack is a great combo! You can make ahead and bake at meal time.
Ingredients
- 8 large eggs
- 1/2 C. Half and Half Cream can use fat free
- 1 C. Shredded Sharp Cheddar divided
- 1 C. Finely Chopped Ham Steak
- Salt & pepper to taste
- 1/2 C. Chopped Green Pepper
- 1/2 C. Chopped Yellow or White Onion
- Olive Oil
Instructions
- Preheat oven to 400°.
- In a skillet, cook the onion and peppers in a bit of olive oil until soft.
- In a large bowl, whisk eggs and cream.
- Stir in the cheese, ham, green pepper and onion, salt and pepper to taste.
- Pour into a greased 9-in. square baking dish.
- Bake until the omelet is golden brown and the center is set, 25-30 minutes.
