Strawberry Rhubarb Pie
Strawberry rhubarb is one of my favorite pies!
Ingredients
- Pie crust dough
- 3 cups sliced rhubarb about 1/4 inch cut
- 2 cups of strawberries
- 1/2 cup white sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup butter cut up
Instructions
- Prepare your pie dough. Sometimes I make the dough from scratch. Sometimes I buy the shells or premade dough.
- Mix the rhubarb, strawberries, white sugar, cornstarch, and lemon.
- Pour the fruit mixture into the crust and spread it out flat.
- Mix the flour, brown sugar, and roughly cut in the butter pieces. It should be thick and crumbly when it is ready. Pour this mixture over top the fruit and spread evenly.
- Bake for 1 hour at 375. I usually put the pie dish inside a cookie sheet with edges, just in case it bubbles over.
- Once cooled, enjoy!
